Baked Chicken - A Twist
I can remember my mom's baked chicken. It was the whole thigh chicken, baked in the oven in the skin with some butter, salt, pepper and maybe other spices I don't know about. The kitchen always smelled so good when she would bake chicken. Well, the skin on the chicken these days isn't so great for your health, and since that added so much flavor, how can you bake a chicken breast without adding a fattening sauce to keep the flavor? Add stuffing. Take frozen chicken breasts and boil them until they are not frozen and still raw in the middle, but done on the outside (keeps the moisture in). Coast the breast in egg, roll it in stuffing (bread crumbs, homemade stuffing, etc.) and put it on a cookie sheet (spray non-stick or put olive oil on the cookie sheet to prevent sticking). I used a boxed stuffing, chicken flavor. I did crush the stuffing a little more, but I kept some of it chunky for more crunch when eating.
