Wonderful Breakfast or Desert
I struggle with my sweet tooth. The best way I have found to stay away from the chocolate, ice cream and candy is fruit. Pretty much any kind of fruit. I think if I have one more orange this week, I will have had 2 oranges every day for the last 7 days!
So, I looked up something which includes fruit, and is low in calories and fat. This is not something you will want to eat everyday, but it is something I will make once in a while for brunch, dinner or desert to keep my sweet tooth from getting out of control.
Fruit Smothered French Toast
What you will need
Fresh or frozen fruit
Brown sugar
Loaf bread
2-3 eggs
Making it
Put your fresh or frozen fruit in a sauce pan (I used frozen, no sugar added, peaches)
Add 1/2 tablespoon of brown sugar
Heat to just boiling and then remove from heat (uncovered the whole time, stirring often)
In a small frying pan, spray with non-stick if needed
Mix 2-3 eggs in a bowl
Dip piece of bread in egg and put in frying pan
Make french toast
Put 2 pieces of french toast on a plate and cover with hot fruit.
**What would make this really good is if you kept some cut fresh fruit and topped the smothered french toast with some fresh cut pieces of fruit.
